snowstorm and American Idol


We had a snowstorm yesterday [Wed Mar 6, 2013], didn't bring so much snow but the winds were gusting at 55mph. The Town of Boone pretty much shut down. I didn't get out of my flannel nightgown all day although Mike would go out and check on the livestock from time to time.

Of course, I made soup and bread, and we watched TV most of the day - including American Idol [I don't start watching until the real talent has been pared down].  This years talent is good, but I'd rate this one below as my favorite AI performance.  I was a big Colton Dixon fan, I like singer/songwriters who sit at the piano and do their thing.

I'm really liking the new judge, Keith Urban, my thinking is in line with his.

I want Colton Dixon and Angela Miller to hook up. She actually wrote this song but has also performed a Colton Dixon song on AI a couple of weeks ago, and I hear that Colton raved about her performance.

mozzarella-and-basil beer bread


The girls are back to laying, so I collected some fresh eggs today.
 And I baked some mozzarella-and-basil beer bread.

3 cups organic all-purpose flour
1 Tablespoon granulated sugar
1 Tablespoon baking powder (make sure it's fresh!)
1 teaspoon salt
2 Tablespoons chopped fresh basil (or 2 teaspoons dried)
1 cup finely grated mozzarella
12 ounces beer
1 farm-fresh egg & and 2 teaspoons water, beaten

Instructions: Heat the oven to 375°. Combine the flour, sugar, baking powder, salt, basil, and mozzarella in a large mixing bowl. Slowly stir in the beer and mix just until combined. The batter will be thick and make sure all the batter is wet. Spread in a greased 8-inch loaf pan, (or 3 mini-loaf pans) brush with the egg glaze, and bake until golden brown and a toothpick stuck in the center comes out clean, about 50 minutes. Cool in the pan on a wire rack for 10 minutes. Remove from the pan and cool 10 more minutes. Serve warm or at room temperature.

Beer Bread, Trophy

It's been cold and snowy here for a few days.

Recently, I've made a couple of loaves of beer bread.  This particular version is feta cheese and rosemary.  Beer bread is a nice change of pace and oh so easy to make/bake. Homemade soup and homemade bread pair so well together.

sad news
For unknown reasons, petite Trophy died on Mar 3, 2013. DOB = 4/30/2009

Trophy was the mother to our GoldMedal. Trophy only had one freshening by C-section on 4/30/2011, two doelings - GoldMedal and HollyWood.

Trophy and GoldMedal only lived with us for 9 months, they arrived in August 2012 . Trophy loved her daughter, GoldMedal, but she had always missed her home at Kids Corral.

We have 14 girls and 3 boys.  It's the time of year when we start seeing which girls maybe got bred for April kiddings. 

I think the judges would really like HollyBerry. 

We think Rhubi is pregnant. Ginger is not looking like it. Rhuthie is too small and too young. 

Bordy can get girls bred but I tried using Tank on some girls but he was only 4 months old so don't think he was getting the job done, he thought he was but...

Rotel Scoops

I was inspired by this recipe but made it my own.

ingredients

  • 1-10oz can Rotel tomatoes, drained
  • 1 cup mayonnaise
  • 1-3oz package real bacon bits
  • 1 cup shredded Swiss cheese (I use Italian blend)
  • 3-19oz packages mini filo shells, thawed

directions - Combine first 4 ingredients. Fill shells and bake for 10-15 minutes at 350 degrees.

Now, this is what I actually made:

  • 1-10oz can Rotel tomatoes with green chilies, drained
  • 1 cup of sour cream
  • 1-lb cooked sausage  
  • 1 cup shredded Mexican blend cheese 
  •  Tostito Scoops

    Mikey loves these. The Rotel Scoops would be perfect for a SuperBowl Party.
