crepes and chicken, not together

First off, I'm not a good cook, I just like talking, reading, and experimenting with recipes. Cooking is a hobby but I'm only on a beginner level. Today while we were shut in, yes the blizzard roars on, I messed around in the kitchen,

If you combine -
1 cup flour
2 eggs
1 cup milk
a pinch of salt
2 tabs melted butter

They turn out like crepes (very thin), and I'm thinking you could go in a savory or sweet direction. We ate 'em as pancakes but the recipe could be the foundation for all sorts of things.

I marinated chicken in some buttermilk overnight, when I got ready to cook it, I drained the buttermilk. If the weather wasn't so poor, my poultry would have gotten the buttermilk.

I crunched some Rice Chex, threw in some seasonings, rolled the chicken. I can't eat the cheapo chicken in the grocery store anymore, besides the whole factory farming issue, to me the chicken has a terrible texture and taste.

because I flipped the chicken during cooking, some of the crunch fell off.

I made some gravy from the pan drippings, turned out tasty. The chicken was very moist.

Snow, Wind, Cold Day

Bitterly cold, strong winds, more snow. Appalachian State University shut down today, rare for them, and Mike and I are at home in our recliners. Yipee!

There's my boys! We had a break in the snow this afternoon, so Franklin and Jefferson stepped out. This morning we woke up to 3 degrees and the local weatherman said that our community had 15" of snow.

Don't think I've burned 5 calories this weekend - just eating, sleeping, reading, watching movies and football. Mike has been doing most of the critter caretaking, while I wash dishes. Snowfall is supposed to begin again late tonight.

On a heavier note, I've been reading prison books. Just want to get an idea of what Jeremy can expect; not good. Prison is full of predators. He hasn't gone to trial yet, don't know when it will be scheduled. Visitation at the Detention Center is Saturday mornings but he got in some trouble (not sure what) this week so they took his visitation privileges away for this Saturday.

from my house, this morning

Snow is forecasted through next Tuesday. At the office, we have a pool going - When will the County School system be back in session? Appalachian State University, however, rarely closes.

Usually wind accompanies snow, so we hardly ever see snow laying in the trees, this was a quiet snowfall.

Our road out. I drove/slid out today but may have to park at the inlaws tonight and walk up.

From local folks, as they are shaking their heads, the most frequently asked question, why do y'all live off the beaten path? Because it's a paradise for our goats, poultry, dogs, and wildlife. And for us too, once we get there.

We produce all of our own eggs for our hatches, tend all of our own flocks, weed and care for the seed crops and produce around 90% of the seed which we sell (one of the highest percentages of any place in the country).
In addition to the seed we produce here we also work with several close friends to produce some rare and unusual items to help give you a bigger and better variety.

nice day, oat meatloaf, dog's thyroid, turkey's

I'm still wearing spikes around the barn, but today was beautiful, and the goats moved up the side of the mountain where the sun hits and the snow has melted.My camera was on a 12X zoom for this photo. The LAST day of December is by far the warmest day of December, we'll see what January 2011 brings.

We took the Irish Terriers, Bliss and Brawn, to Dr. Beckworth's today. Blissi's hair is falling out, the doc checked for parasites but nothing, he said she may have a thyroid problem, and we'll need to do a blood test after the holidays when the lab courier is running.

Mike's sinus infection has turned in to bronchitis, but he refuses to go to the 24/7 Urgent Care. I keep telling him that the Z-pak stuff really helped me.

Buddies, Franklin and Jefferson, are doing great but Bennie not so much. We've got Bennie safely away from F&J, on the other 1/2 of the poultry coop, but Bennie is grieving for his other home and his girlfriend, Chestnut, that is still living there.

We got Franklin as a mature tom and he almost grieved himself to death after we brought him home, he lost a lot of weight and didn't gobble for a couple of months. Turkey's are very emotional.



His head has been real red like that ever since we brought him here, he's very stressed, so Wish Bennie a Happy 2011.
