roasted vegetables


I make variations of this dish ALL the time, just depends on what I have around. I lay the potatoes skin up, and yes the red potatoes work best, so they get a french-fry texture on the bottom.

That's a lot like Miss Chef's go-to dish: cook up some veggies, toss 'em with pasta, add lots of parmesan, maybe some pesto. Voila! And all those veggie colors look beautiful. Never the same dish twice!

Mmmmm! I don't like veggies too much (naturally I don't, they're good for you). Those however, look absolutely yummy.
