snow day & Broccoli-Cheddar Quiche

Joanna didn't have to go to work today, Appalachian State University shut down due to the blizzard. The University HATES to close, the powers-that-be have to really be cornered and under duress first.

Broccoli-Cheddar Quiche, here's what I do, I don't actually measure anything, quiche is difficult to screw up. Here is a basic recipe, throw in whatever you like or have on hand - crumbled bacon, minced onion, spinach, etc. You can use different cheeses too, we just like sharp cheddar the best.

1 deep-dish pie crust
1 cup or more of sharp Cheddar Cheese
3 Tbs melted butter
frozen broccoli florets, or chopped broccoli
5 fresh eggs from your darling girls,
(old, factory eggs from the grocery store if you must)
1 cup of fresh goats milk from your precious girls,
(cows milk full of horomones from the grocery store if you must)

PREHEAT oven to 375°F. Bake the pie crust for a few minutes, then pull it out, sprinkle half of the cheese evenly onto bottom of crust. lay in some frozen broccoli covering the bottom, add remaining cheese.

BEAT eggs, add butter and milk until well blended; pour over ingredients in crust.

For the outside crust, I beat one egg and some water in a small bowl, coat the edges well.

BAKE 45 min, making sure the center is fairly solid

Big fan of days off. Don't care for quiche. Certainly don't need anymore roosters. Had two white silkies returned from someone who got them for free. Enjoy your day off.

mmmm mmmmm. I'm going to ask my lady to cook that quiche for me! She says anything that combines cheese, pastry, eggs, broccoli and onions has to be GREAT!

I like your editorial comments about your ingredients! You're right, quiche is pretty hard to screw up, which is part of its charm.

Hey Joanna - since ya'll eat so many eggs...

What's your take on how many eggs to eat a day or a week? Do you believe all that info about cholesterol and such? I know free-range chickens have less omega 6, and more omega 3. I wonder if I worry too much, and if we all just oughta do everything in moderation.

Oh darn! I wish I liked cheese. I actually will eat mild white cheese, like mozzarella or farmer's cheese, but cheddar makes me gag. That quiche sounds so good though. I wonder if it would be good with mozzarella or even creamy tofu?

I'm glad you don't have to go out into that crazy weather due to your job. whew!

ps Thanks for the link you left me on my blog, Joanna. Unfortunately, that horse is akin to me going shopping for a BMW on a Chevy budget. Way over-priced for me this time around. I paid too much for my Baby Doll at $3,500and was only able to get $900 for her. So I can't go much higher than that for my next horse.

Thankfully, due to the time of year and the poor horse market that does seem to be attainable. It just takes a lot of experienced looking.

By the way, other horses also have the racking gaits, too. Gaited horses like the Tennessee Walkers, Missouri Fox Trotters, Icelandics and Paso Finos, too.

Interestingly enough, this little mare I'm going to be trying out this week is supposed to be part Paso Fino and has the racking 4-step gait at a trot. We'll just have to see. It would be nice to have a more comfortable ride. :)

Darn, that quiche looks good! I haven't had any in a long time. I guess I'll have to get my dumb old store bought eggs and nasty store bought milk out -

Mmmm that looks good.
We finally have snow down here! I know it isn't exciting to all those who see it regularly but it has been years since we had enough snow to see on the ground. It looks about like 4 inches right now.
And...I made snow ice cream just now.
